The benefits of tiger nut flour in baking is that’s it’s nut-free, gluten-free and super high in fiber. Plus, it’s good for your gut health (which is what we do at the 131 Method). Its powdery consistency makes it great for baking. Naturally and lightly sweet, we chose it for two delicious chocolate chip cookie variations. We also love it for tiger nut milk and horchata!

We know many of you can’t eat nuts or eggs, so the below version is for you! This recipe yields a firmer, crispy edged cookie. If you prefer a soft batch cookie, try the one with the egg. Enjoy!

Tiger Nut Flour Chocolate Chip Cookies (Egg-Free)
Yield: 10 servings
Serving Size: 1 cookie

Cook Time: 9 min
Ingredients:
- 1⅛ cup tiger nut flour (finely ground)
- 1 tablespoon tapioca flour
- 2 teaspoons gelatin
- 1 teaspoon baking soda
- Pinch sea salt
- ¼ cup ghee, softened
- ¼ cup coconut oil, softened
- ¼ cup Lakanto Monkfruit Sweetener Golden
- 1 teaspoon vanilla extract
- ¼ cup sugar-free chocolate chips
Method:
- Heat oven to 350°
- Whisk together the tiger nut flour through salt.
- Stir in the ghee, oil, sweetener and vanilla until a soft dough forms. Stir in chocolate chips.
- Place dough in refrigerator for 10 minutes.
- Scoop into 10 balls and roll lightly. Place on a baking sheet lined with a silpat or parchment.
- Flatten slightly with a spoon or fork. Bake for 9 minutes.
- Cool completely before removing from the baking sheet.

Ingredients:
- 1 cup Tiger nut flour (finely ground)
- 3 tablespoons Lakanto Monkfruit Sweetener Golden
- ¼ teaspoon baking soda
- Pinch sea salt
- 1 egg
- 2 tablespoons ghee, softened
- 1 teaspoon vanilla extract
- 3 tablespoons sugar-free chocolate chips
Method:
- Heat oven to 350°
- Whisk together the tiger nut flour through salt.
- Stir in the egg, ghee, vanilla and chocolate chips until a soft dough forms.
- Spoon by the heaping tablespoon onto a baking sheet lined with a silpat or parchment.
- Bake for 9 minutes.
- Cool completely before removing from the baking sheet.
