But Bethany, aka @lilsipper on Instagram, sucked us in with all three. Her vulnerability about her past struggles with debilitating gut issues has really made her a hero to her audience. And with good reason! She took those lemons and made delicious lemonade, creating gut healing recipes and imparting wisdom to countless people out there struggling daily with stomach pains, bloating, weight loss, weight gain, hair loss and a myriad of side effects caused by digestive problems.
Her issues nearly killed her. Literally. She knows a ton about the food industry too after working as the head of marketing for a vegan meat company. Imagine walking to your pantry, opening it up, and knowing you have all the ingredients for a recipe you’re dying to make that moment. No going to the store. No buying a big bag of something only to use a tiny bit for one recipe, never to use the rest again. Quite literally the queen of the two and three ingredient recipes, Bethany created these donut holes using one of our favorite gadgets: the air fryer. Using just cassava flour (a prebiotic fiber) and yogurt (you know all about those probiotics) and a pinch of baking powder, you too can have doughy crispy goodness on your plate in under 10 minutes! The oozy middle goodness is optional (but not really). HA!
What is it about childhood that makes us want cookies, candy and chips? Maybe it’s the sweet and innocent time where calories truly didn’t matter (because you didn’t know what they were).
