We are proud to announce our second winner in our 131 Recipe Contest! These Mango Berry Popsicles came from Kari H. These frosty treats taste like summer! Full of berry-mango goodness, they take minutes to throw together and beat anything you can buy from the grocery store.
Kari says, “as a mother of three, I struggle to find recipes for my picky eaters. The 131 has helped a ton with this! We all love sweets, and these popsicles are something we feel good about eating. I also throw in spinach, chia seeds and a little MCT oil sometimes.”
We selected her recipe based on a few things:
- Easy to make
- Seasonal (especially with summer around the corner)
- Perfect macros for Carb Charge (or really any phase because they’re so low!)
- Flexible (a variety of options for fruits)
- Full of antioxidants
- Cost effective
And now…drum roll please…the winning recipe…
Mango Berry Popsicles
Yield: 6 servings
Serving Size: 1 Popsicle
Prep Time: 5 min
Chill Time: 6 hours
1½ cups nondairy milk (carton almond or coconut)
1 cup frozen mixed berries
⅓ cup frozen mango chunks
- Add all ingredients to a high-powered blender and process until smooth. Pour into Popsicle molds or Zipzicle Freeze for 6 hours, or until firm.
