Berry Cheesecake Whips
Yield: 4 servings
Serving Size: 1 dessert

Ingredients:
Mashed Berries
- 2 cups frozen mixed berries
- 1 tablespoon lime juice (feel free to use lime zest too!)
- 1 tablespoon Lakanto or Swerve Confectioners Sweetener
Whip
- 1 cup heavy whipping cream, room temperature
- 4oz cream cheese, room temperature
- ¼ cup Lakanto or Swerve Confectioner’s Sweetener
- 1 teaspoon vanilla extract
Method:
- Add the berries, lime juice and 1 tablespoon sweetener to a small pot. Bring to a boil, then reduce to a simmer, stirring occasionally. Allow to reduce and become slightly syrup-y. Mash any large berries. Set aside to cool.
- Using a stand or hand-held mixer, add the whipping cream and beat to stiff peaks. Add the sweetener and vanilla and mix briefly. Remove to a different bowl. Add the cream cheese to the original mixing bowl. Whip until smooth. Fold the whipped cream and cream cheese together.
- Layer the whip and berries into four 3-ounce dessert cups. Refrigerate for at least 1 hour before serving. Top with blueberries, raspberries, or strawberries, if desired.

Strawberry Mint Mojito
Yield: 2 servings
Serving Size: ½ recipe

Ingredients:
- ½ cup chopped fresh strawberries
- Juice from 2 limes
- 2 tablespoons Swerve Sweetener Confectioners
- 4oz rum
- 10oz club soda
- Several sprigs fresh mint
Method:
- Squeeze the lime juice over the strawberries in a small blender. Add the sweetener. Let sit for several minutes, then blend. Press through a sieve, and reserve some of the mash for the bottom of your glass, if you like. Mix with the rum and club soda. Divide and pour over ice. Garnish with mint and more sliced limes.
- Leave out the rum for a non-alcoholic option!

Arugula Watermelon Salad
Yield: 6 servings
Serving Size: 1/6th recipe

Ingredients:
- 1/4th large red onion, sliced
- ½ cup apple cider vinegar
- 1 tablespoon Swerve
- 10oz arugula
- 2 cups chopped watermelon
- ¼ cup chopped basil leaves
- ¼ cup olive oil
- 3 tablespoons raspberry vinegar (or dark balsamic)
- Fresh salt and pepper, to taste
- ⅓ cup pecans
- 2oz crumbled feta
Method:
- Heat the vinegar and Swerve in a small pot to boiling. Pour over the onions and let sit for 30 minutes to quickly pickle them. Drain.
- Add the arugula, watermelon, and basil to a large bowl. Whisk the olive oil, vinegar and salt and pepper together. Toss into the salad. Top with the pickled onions, pecans, and feta. Serve immediately.

Avocado Cucumber Side Salad with a Kick
Yield: 6 servings
Serving Size: 1/6th of salad

Ingredients:
Dressing
- 1 large ripe avocado
- Small handful of cilantro
- Juice from 2 limes
- 1-2 tablespoons Sriracha (depending on how spicy you like it)
- 1 tablespoon olive oil
- 1 tablespoon rice vinegar
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Sea salt, to taste
Salad
- 2 English cucumbers, cut into half-moons
- 1 large avocado, cubed
- 1 green onion, chopped
- ½ red bell pepper, diced
Method:
- Add dressing ingredients to a mini blender and process until smooth.
- Toss with the cucumber. Fold in avocado cubes, green onion, and bell pepper. Garnish with additional cilantro, if desired.

4th of July Recipe: Frozen Yogurt Bites
Yield: 3 servings
Serving Size: 3 cubes
Prep Time: 5 min
Freeze Time: 1 hr
Ingredients:
- 3oz vanilla nondairy yogurt
- 2 large strawberries, chopped small
- 12-15 blueberries, sliced in half
Method:
- Add the chopped fruit (either separately or mixing them) into 9 wells of an ice cube tray.
- Spoon the yogurt on top. Tap the tray. Freeze until frozen.
